- In a small frying pan, heat the olive oil and sauté the sucuk slices on both sides until they are browned. Once browned, remove them from the pan and set them aside on a plate.
- In the remaining olive oil, add the grated tomatoes, sugar, oregano, and season with salt and pepper.
- Cook over medium heat for 2 minutes until the liquid is absorbed.
- Add the sucuk back into the pan and create small wells. Crack the eggs into these wells.
- Add the cheese, cut into small cubes, sprinkle the paprika, and let it cook until the eggs are done to your liking.
- Remove from heat and garnish with chopped parsley.
- Serve ideally with toasted fresh bread.
One Pan Eggs and Sucuk

100 g kasseri cheese (or kefalotyri or graviera cheese)
2 sprigs fresh oregano
1/3 teaspoon sweet paprika
